Quick and easy dinner: Fajitas
Ingredients:
- Sliced bell peppers (I used a whole green, half a yellow, half a green)
- A mashed avocado
- A small onion chopped
- 1 can of organic black beans, drained and rinsed
- Mini tortillas
- Lightly spray or coat (with oil) a wok or fry pan to medium heat
- Sauté onions till they start to brown
- Add the peppers and sauté till soft
- Finally add the beans till heated
- Cover a tortilla in mashed avocado, top with the sautéed mixture
