Quick and easy dinner: Fajitas
 


Ingredients:
  •  Sliced bell peppers (I used a whole green, half a yellow, half a green)
  • A mashed avocado
  • A small onion chopped
  • 1 can of organic black beans, drained and rinsed
  • Mini tortillas
Recipe:

  1. Lightly spray or coat (with oil) a wok or fry pan to medium heat
  2. Sauté onions till they start to brown
  3. Add the peppers and sauté till soft
  4. Finally add the beans till heated
  5. Cover a tortilla in mashed avocado, top with the sautéed mixture
The tortillas won't wrap up perfectly and this recipe is meant to be a little messy but so delicious!
